Easy Honey Balsamic Mushroom Recipe

I love portobello mushrooms!  These mushrooms have an earthy flavor to them that I truly enjoy.  This essence lends an exotic taste to whatever dish they’re added to.  Also, they have a meaty texture that makes them a good substitute if you’re vegetarian.  (Have you ever had mushroom burgers?  They are the bomb!)  So this easy mushroom recipe is my go-to recipe if I want to do more than just a salt-and-pepper sauteed mushroom dish.

The husband and I are trying to live a healthy life.  In truth, this is part of our new year’s resolution – healthier and back to basic dining.  This is because the hubbie’s latest physical exam numbers were not very good, unfortunately.  So we’re cutting down on carbs, red meat and too much sweets (specially for me).  Mid life really means taking extra care of your health – whether one likes it or not.

So during the whole week we try to eat more nutritious food.  We eat mostly fish, a lot of vegetables and healthy grains.  This means, not much sugar and no white rice.  Altho, honestly, it’s not that easy.  I have a sweet tooth and I like snacking while I work.  In other words, I’m a carb-aholic and so I have to find ways to satisfy the hunger pangs in a better way.

This easy mushroom recipe satisfies my sweet tooth because it uses honey.   But the sourness of the balsamic vinegar balances the sweetness. Balsamic vinegar and mushrooms complement each other’s individual earthy taste.  This recipe is so simple that the measurements of the ingredients isn’t even strict.  You can adjust it to the way you want it to taste.  It’s that painless to make!

Honey Balsamic Mushroom dish

EASY HONEY BALSAMIC MUSHROOM RECIPE

INGREDIENTS:
  • 2 lbs portobello mushrooms
  • 2 tbsps olive oil
  • 1/4 cup honey
  • 1/2 cup balsamic vinegar
  • 4 garlic cloves
  • salt and pepper to taste
DIRECTIONS:
  1. Wash and pat dry the mushrooms.
  2. Mince the garlic.
  3. In a skillet over medium heat, pour the olive oil.
  4. Add the mushrooms, salt and pepper.  Saute for about 2 minutes until the mushrooms are somewhat tender.
  5. In a bowl, mix the balsamic vinegar, honey and garlic.  Add the sauce to the mushrooms.
  6. Continue to sautee until the mushrooms are coated in the sauce.
  7. Transfer to a serving bowl.

This easy mushroom recipe goes well with steaks or broiled fish.
